Brown Butter Chocolate Chip Cookies 🍪 / Ingredients: - 180g unsalted butter (3/4 cup + 1 tablespoon) - 100g granulated sugar (1/2 cup) - 100g brown sugar (1/2 cup) - 1 large egg + 1 large egg yolk - 1 teaspoon vanilla bean paste - 220g all purpose flour (1 cup + 3/4 cup) - 1/2 teaspoon baking soda - 1/2 teaspoon salt - 50g dark chocolate chips (1/3 cup) - 50g milk chocolate chips (1/3 cup) - 50g semi sweet chocolate chips (1/3 cup) Instructions: 1. Add the cubed butter to a skillet or saucepan and let it melt over medium heat.  2. Stir constantly and let it cook until the milk solids turn brown and it smells slightly nutty. Be careful not to burn it. 3. Once ready, pour it into a large bowl and let it cool for about 15 minutes. 4. Once the brown butter has slightly cooled, add the granulated sugar and brown sugar and mix to combine. 5. Next, add the egg, egg yolk and vanilla bean paste. Mix until fully incorporated. 6. Then add the flour, baking soda and salt. Fold gently until just combined. 7. Lastly, fold in the chocolate chips. 8. Scoop 12 equal portions of cookie dough onto a baking tray lined with parchment paper.  9. Cover and place in the fridge for 30-60 minutes. 10. Preheat the oven to 180°C. 11. Place the cookies onto a large baking tray lined with parchment paper, leaving space between them. I recommend baking a maximum of 4-5 cookies per tray. 12.
