You can find the step by step printable recipe here 👇🏼 or follow along below! https://prettydeliciouslife.com/gooey-cottage-cheese-blondies-easy-protein-dessert/ 16 ounces full-fat cottage cheese 1 cup drippy (natural) peanut butter 1 ½ cups almond flour ½ cup coconut sugar 1 scoop (about 1/4 cup) vanilla protein powder, optional 3 tablespoons chocolate chips or chopped chocolate 1 teaspoon vanilla extract optional Pinch of salt Prepare to bake. Preheat the oven to 350 degrees F. Line an 8x8 baking dish or prepared baking pan with parchment paper and set aside. Blend the cottage cheese. Add the cottage cheese to a food processor or high-speed blender and blend until smooth. Mix the batter. Transfer the blended cottage cheese to a large mixing bowl. Add the peanut butter, almond flour, coconut sugar, vanilla protein powder if using, vanilla extract, and a pinch of salt. Mix until fully combined. Fold in the chocolate chips. The batter will be very thick. Bake. Scoop the batter into the prepared baking pan and press it down evenly with the back of a spatula. Bake for 20-25 minutes for softer blondies, or closer to 30 minutes if you want them more firm and cakey. Cool and slice. Cottage cheese can be a textural nightmare for some people but just like OP said, once you whip it, I promise you can add it in so many things to increase protein & never tell. Keep an eye on the salt, cottage cheese is inherently salty so you definitely want to eliminate salt from the recipe or test it first. I’m able to make super healthy versions of ranch dip and Alfredo using whipped cottage cheese. It’s insane. 😂
