@caitlinjesson: My favorite easy weeknight dinner, I could truly eat this one every single night! The salmon is marinated in a quick miso sauce then broiled for less than ten minutes. I like to keep it simple with some rice, avo, sliced cucumber and maybe a bit of seaweed but you can add in whatever veg you have on hand. You cannot go wrong with this one! Miso salmon: 2 lb salmon, cut into 1 ½ inch pieces with skin removed 2 tbsp low sodium tamari 2 tbsp white miso paste 4 tsp honey 4 tsp rice vinegar 2 tsp avocado oil 1-2 tsp sriracha, depending on heat preference White rice, cooked Cucumber, thinly sliced Avocado, sliced Sesame seeds (optional) To make salmon, combine tamari, miso, honey, vinegar, avocado oil and sriracha in a large bowl and whisk well. Add in salmon and toss to coat evenly. Ideally this would marinate for 1 hour in the refrigerator but you can cook it immediately if you don’t have the time. Turn broiler to high and position rack ⅔ of the way up your oven, about 8 inches from the heat source. Place salmon on a foil lined baking sheet and broil until fish looks charred and blackened on top, about 7 minutes, rotating the baking sheet once or twice to ensure even cooking. To make bowl, add several scoops of rice as your base then layer on cucumber, avocado and salmon bites and finish with sesame seeds.
