I’m a Tea Sommelier and this is week 11 of my cold brew tea series where I make a new cold brew every week this summer. This is a cold brew Thai iced tea! It tastes exactly like the Thai iced teas you’ve had at Thai restaurants. After testing and tasting multiple versions, here are my top 3 tips. One, use authentic Thai tea mix. Get the Thai tea mix with the hand on the package. That bright orange color? It’s from artificial coloring that’s in the Thai tea mix. And it stains like crazy. Two, use both evaporated milk AND sweetened condensed milk. The combination of the two really makes it taste like the real thing. Three, there’s a crapload of sugar in Thai iced tea. I tried so many variations using less sugar and it doesn’t taste restaurant-quality. One other thing I do is to add more black tea to boost the tea flavor. (Thanks to Fred at Te Company for the idea.) I recommend using cheap black tea for this or even Lipton tea bags. Put Thai tea mix, black tea, sugar, water, sweetened condensed milk, and evaporated milk into a container. Refrigerate for 6-12 hours. Since the tea pieces in this are so small, it doesn’t take long to cold brew. The small tea pieces also means the tea is harder to strain completely. To serve, put ice into a cup and add the cold brew Thai tea. Get the ingredients right now and make it this weekend! It’s so delicious and goes so well with spicy food.
