Actually that’s not a Hebrew concept. According to the Hebrew Scriptures themselves, the “original sin” is simply Adam and Eve’s first act of disobedience. Its consequences affect humanity, but the idea that every person is born guilty because of Adam’s sin is a later Christian theological development rather than an explicit teaching of the Tanakh. In Judaism, the story of Adam and Eve is generally understood as explaining:
* Why humans are mortal.
* Why moral choice exists.
* Why suffering is part of human life.
Judaism emphasizes that every person has both good and evil inclinations (the yetzer ha-tov and yetzer ha-ra) and is accountable for their own choices rather than bearing Adam’s guilt. The formal doctrine of original sin developed much later in Christian theology, especially through Augustine of Hippo. Augustine interpreted Paul’s writings—particularly Romans 5—as teaching that Adam’s sin is transmitted to all humanity, making everyone born with both a sinful nature and inherited guilt.
This understanding is not found explicitly in the Hebrew Scriptures and is not the traditional Jewish interpretation.

In actuality, the story points out how humans received knowledge before they were mature enough to handle and understand it. Also, it's not "knowledge" that was kept guarded from the original humans, but the knowledge of good and evil. Rather large difference there. There are some good Orthodox podcasts that explains it correctly instead of the dumb Evangelical way we were all taught.
