@ericaann.co: Come plate dinner for our family of 7 with me 🍽️ I make this chicken, rice and peppers at least once a week because everyone in our house actually eats it, which is saying a lot when you are feeding seven people. 😂 It tastes like something you would order at a restaurant, but it is so quick and easy to make at home. It is smoky, zesty, a little spicy and honestly one of the best flavor combinations I have ever made. Ingredients: • 1 red bell pepper, sliced • 1 yellow bell pepper, sliced • 1 orange bell pepper, sliced • Olive oil • 1 lb chicken breast, sliced fajita-style • Salt and pepper • Chili lime seasoning • Chipotles in adobo, blended smooth • Jasmine rice, cooked separately • Avocado • Fresh lime • Cilantro, optional Quick chipotle mayo: • 2 to 3 tbsp mayo • 1 tsp blended chipotle • A big squeeze of lime Mix everything together and taste. Add more chipotle if you like it spicier. How I make it: 1. Sauté the peppers in olive oil until they are soft and slightly caramelized. 2. Add the chicken and season with salt, pepper and a generous amount of chili lime seasoning. 3. When the chicken is almost fully cooked, stir in a few spoonfuls of blended chipotle. You only need enough to lightly coat everything. 4. Serve over jasmine rice. 5. Top with avocado, fresh lime and cilantro if you like it. 6. Drizzle the chipotle mayo over the top or serve it on the side for dipping. This is truly one of our most-made dinners, and watching all seven plates disappear is always a win. 🤍 What is one dinner your whole family will actually eat?
