Season the beef roast with salt and black pepper. 2. Heat olive oil in a skillet and sear the roast on all sides. 3. Transfer the roast to the slow cooker. 4. Add the onion, carrots, garlic, beef broth, Worcestershire sauce, tomato paste, thyme, rosemary, and onion powder. 5. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours until the beef is fork tender. 6. Remove the beef and shred it using two forks. 7. Mix the cornstarch with water and stir it into the cooking liquid to thicken the gravy. 8. Return the shredded beef to the slow cooker. 9. Cook the egg noodles separately according to package directions and drain. 10. Fold the cooked noodles into the beef and gravy until well coated. 11.
