Fold in the cooked spinach and garlic mixture until well combined. Stuff the potatoes. Spoon the filling back into each potato skin, mounding it slightly. Sprinkle the tops with a little extra mozzarella or Parmesan if desired. Bake again. Arrange the stuffed potatoes on a baking sheet and return to the oven for another 15–20 minutes, until the tops are golden and slightly crisp. Garnish and serve. Remove from the oven and let cool for a few minutes. Garnish with fresh dill or parsley before serving.
