My new favorite way to make burgers  For the Burgers * 2 potatoes * 1 lb ground beef * Kinder’s seasoning (or your favorite burger seasoning) Burger Sauce * 2 tablespoons ketchup * 2 tablespoons mustard * 2 tablespoons mayonnaise * 3 pickles, finely diced * 1 teaspoon pickle juice * ¼ white onion, finely diced Homemade Chips * Potatoes, thinly sliced * Olive oil, for frying * Salt, to taste Instructions Make the Burger Sauce In a small bowl, combine the ketchup, mustard, mayonnaise, diced pickles, pickle juice, and diced onion. Stir until well combined and refrigerate while you prepare the burgers. Prepare the Burgers 1. Using a mandoline, slice the potatoes into very thin rounds. 2. Place the potato slices in an ice water bath for 30 minutes to remove excess starch. 3. Drain and pat the potatoes completely dry with paper towels. 4. Season the ground beef generously with Kinder’s seasoning and mix well. 5. Press the seasoned beef into an even layer on a parchment-lined baking sheet. 6. Arrange the potato slices over the top of the beef, slightly overlapping them in a scalloped pattern. 7. Bake at 450°F for about 15 minutes, or until the beef is cooked through and the potatoes are tender with crispy edges. 8. Remove from the oven, slice into burger-sized portions, and top generously with the homemade burger sauce. Homemade Chips 1. Thinly slice additional potatoes using a mandoline. 2. Soak the slices in an ice water bath for 30 minutes. 3. Drain and dry the potatoes thoroughly. 4. Heat olive oil in a deep pan over medium-high heat. 5. Fry the potato slices for about 2 minutes per side, flipping once, until golden and crispy. 6. Transfer to a paper towel-lined plate and season with salt while still hot. #burger #lowcarb #homemade

Filo with custard filling — and this is my easy one tray version for when you need to take something homemade somewhere special. 🤍 Filo pastry, silky custard, sugar syrup. That’s it. No piping, no fuss — just layer it all in one tray and bake. The best part? Make it a day ahead and it actually tastes even better once it’s had time to set in the fridge. So you’re not rushing on the day. Because turning up with something homemade — that’s how you honour an invitation. Recipe below. 👇 Sahtan. 🤍 Sugar Syrup 2 cups sugar 1 cup water 1 teaspoon lemon juice Custard Filling 6 cups milk ½ cup sugar 6 tablespoons custard powder 4 tablespoons cornflour 2 teaspoons vanilla paste Pastry 25 filo pastry sheets (thick style) 150 grams ghee, melted, plus 2 extra tablespoons 1⁄4 cup ground pistachios 👉🏽 Combine the sugar, water and lemon juice in a small saucepan and simmer over medium heat, stirring until the sugar dissolves and the syrup thickens slightly. Set aside to cool completely — this can be made up to a week ahead. 👉🏽 Whisk the milk, sugar, custard powder and cornflour together cold in a saucepan until smooth, then place over medium heat, stirring constantly until thickened. Remove from heat, stir through the vanilla paste and pour into a bowl. Cool for 10–15 minutes, whisking occasionally so it doesn’t set or form a skin. 👉🏽 Preheat oven to 180°C fan-forced (190°C conventional / 375°F). Brush your tray with 2 tbsp melted ghee.
