Filipino Curry 🍛 Filipino chicken curry originated from Indian curry & is traced to the 18th century when it was adapted from Indian soldiers who settled in the Philippines. As the Seven Years War spilled into the East, the British, along with around 500 sepoy troops, occupied the capital of Manila during this time. Sepoys were Indian soldiers assigned to European garrisons to provide manpower for the defense of European colonies in Asia.  British superiors treated them as insignificant workers, severely mistreating them. In 1763, the Treaty of Paris ended the Seven Years War & in June 1764 the British vacated Manila & sailed back to India. At this time, a significant number of sepoys formed a mutiny &did not return, eventually settling down in different parts of Luzon.  Ingredients: 2 Tbsp coconut oil 2 lbs chicken (I used 1 lb boneless chicken thighs & 1 lb drumsticks) 2 Tbsp curry powder 2 Tbsp fish sauce 1/2 tsp paprika  1 can of coconut milk 4 cloves of garlic, minced 1/4-1/2 onion, diced 2 carrots, cut into chunks 1 large potato, peeled &cut into chunks 1 bell pepper (I used 1/2 green & 1/2 red for color) 1/2 tsp salt 1/4 tsp pepper 2-3 peppers, optional  Green onions, for garnish Method: Heat coconut oil over medium-high heat. Add in potatoes & carrots & fry until crispy & brown. Once done, transfer to a plate, leaving the oil in the pan. In the same pan, add in garlic &onions & cook until onions are soft, approx 3 minutes.  Add in chicken & cook until browned on all sides. Add in fish sauce, curry powder, paprika, & S&P. Mix, then cover & cook for 5 minutes. Add in coconut milk, reduce heat to medium, cover & cook until chicken is done. Stir occasionally, approx 20-30 min. Remove the cover. Add bell peppers & chilis. Add back in carrots & potatoes. Cover & cook for 5-10 more minutes or until bell peppers are soft.  Uncover, increase heat to medium high & bring everything to a boil. Cook until your desired consistency is reached. I usually like mine a little soupier but this day I accidentally cooked it down a little too much, lol. The taste was still bomb tho! Add S+P to taste, if desired. Garnish with green onions.
