Egg Masala 🥚🤎✨ Ingredients: Eggs – 3 Mustard oil – as required Onion (finely chopped) – 1 medium Ginger garlic paste – 1 tbsp Tomato paste – 1 medium tomato Salt – to taste Kashmiri red chilli powder – 1 tbsp Red chilli powder – ½ tbsp Black pepper powder – ½ tbsp Cumin powder – ½ tbsp Coriander powder – slightly more than ½ tbsp Turmeric powder – slightly less than ½ tbsp Fresh coriander leaves – a handful Water – as required Method: Heat a little mustard oil in a kadhai. Crack 1 egg into the pan, sprinkle a little salt and red chilli powder, then fry on both sides. Repeat with the remaining eggs until all 3 eggs are fried. Remove and keep aside. In the same kadhai, heat a little more mustard oil. Add 1 medium finely chopped onion and cook until golden brown. Add 1 tbsp ginger garlic paste and sauté well. Add a splash of water, then stir in the paste of 1 medium tomato. Add salt, 1 tbsp Kashmiri red chilli powder, ½ tbsp red chilli powder, ½ tbsp black pepper powder, ½ tbsp cumin powder, slightly more than ½ tbsp coriander powder, and slightly less than ½ tbsp turmeric powder. Add a little water and bhuno the masala until well cooked. Pour in water as needed for the gravy. Once it comes to a boil, gently add the fried eggs.
