Ingredients • ½ red bell pepper, diced • ½ yellow onion, diced • 3 garlic cloves, minced • 2 cans black beans • Olive oil • Salt, to taste • 1 tsp oregano • ½ tsp cumin • 1 bay leaf • A couple dashes of red wine vinegar Directions 1. Heat a drizzle of olive oil in a pot over medium heat. 2. Add the diced onion and red bell pepper. Sauté for 4–5 minutes until softened. 3. Stir in the minced garlic oregano, cumin, and salt to taste. and cook for 30 seconds until fragrant. 4. Add both cans of black beans (with the liquid), and a bay leaf. Stir everything together. 5. Bring to a gentle simmer and cook for 15–20 minutes, stirring occasionally. 6.
