Every time I hear Welsh Rarebit it makes me smile thinking the national dish of Wales is effectively cheese on toast. There are variations on the recipe but each one seems lovely and comforting, no need for poncy complicated food, to me simple is best.

Try a scraping of Marmite on the bread/toast first. You can top with all sorts of things..,bacon, onion, ham tomatoes, sliced olives etc.
