𝟭𝟵𝟭𝟳 𝗠𝗮𝗻𝘀𝗶𝗼𝗻 𝗧𝘂𝗿𝗻𝗲𝗱 𝗖𝘂𝗹𝘁𝘂𝗿𝗮𝗹 𝗗𝗶𝗻𝗻𝗶𝗻𝗴 𝗗𝗲𝘀𝘁𝗶𝗻𝗮𝘁𝗶𝗼𝗻 Stepping through the doors of a century-old heritage mansion. Spotted! Cyril visits Balay Remedios located at 183 Bonifacio Drive, Iloilo City Proper (situated in the vicinity of the Iloilo Provincial Capitol and just fronting the National Museum of the Philippines). The house was built in 1917 by the brilliant engineer and designer 𝘌𝘶𝘴𝘦𝘣𝘪𝘰 𝘊𝘰𝘯𝘭𝘶 𝘝𝘪𝘭𝘭𝘢𝘯𝘶𝘦𝘷𝘢, along with his brother 𝘚𝘦𝘳𝘢𝘧𝘪𝘯 — famously recognized as the “𝘉𝘶𝘪𝘭𝘥𝘪𝘯𝘨 𝘒𝘪𝘯𝘨𝘴” of Iloilo during the city's economic boom. The mansion features a 𝘮𝘰𝘥𝘪𝘧𝘪𝘦𝘥 𝘣𝘢𝘭𝘢𝘺 𝘯𝘢 𝘣𝘢𝘵𝘰 (house of stone) architectural style, capturing the affluent aesthetic of Iloilo's golden past. It is characterized by expansive, polished wooden floors, massive sliding windows, and intricate 𝘷𝘦𝘯𝘵𝘢𝘯𝘪𝘭𝘭𝘢𝘴 or small window slats under the sills that allow for natural ventilation. The house eventually earned the name 𝘉𝘢𝘭𝘢𝘺 𝘙𝘦𝘮𝘦𝘥𝘪𝘰𝘴 in honor of Eusebio’s wife, 𝘙𝘦𝘮𝘦𝘥𝘪𝘰𝘴 𝘔𝘦𝘭𝘭𝘪𝘻𝘢 𝘚𝘪𝘢𝘯 𝘝𝘪𝘭𝘭𝘢𝘯𝘶𝘦𝘷𝘢, whose family originally hailed from sugar lands in Negros. Passed down through generations, the mansion is currently managed by the third generation of the Villanueva family. In September 2023, the family officially opened the estate to the public as 𝘉𝘢𝘭𝘢𝘺 𝘙𝘦𝘮𝘦𝘥𝘪𝘰𝘴 𝘐𝘭𝘰𝘪𝘭𝘰 𝘔𝘶𝘴𝘦𝘶𝘮 & 𝘙𝘦𝘴𝘵𝘢𝘶𝘳𝘢𝘯𝘵. Today, its vibrant salmon-pink main sala operates as a cultural dining space where visitors can enjoy traditional Spanish-Ilonggo heritage cuisine. 𝙒𝙝𝙖𝙩 𝙄 𝙏𝙧𝙞𝙚𝙙: •𝗘𝘂𝘀𝗲𝗯𝗶𝗼’𝘀 𝗣𝗮𝗲𝗹𝗹𝗮 𝗦𝗲𝘃𝗶𝗹𝗹𝗮𝗻𝗮: A generous medley of fresh seafood that gets an incredible boost of savory depth. Richly seasoned saffron rice layered with vibrant notes of pimentón (Spanish paprika) and chicken. •𝐑𝐞𝐦𝐞𝐝𝐢𝐨𝐬 𝐏𝐨𝐥𝐥𝐨 𝐲 𝐂𝐡𝐨𝐫𝐢𝐳𝐨: Features tender chicken complemented by the bold, rustic notes of smoky chorizo. •𝗟𝗲𝗻𝗴𝘂𝗮 𝗖𝗼𝗻 𝗖𝗵𝗮𝗺𝗽𝗶𝗴𝗻𝗼𝗻: An ox tongue dish that is slow-simmered until reaching that strictly fork-tender touch. Then drenched with a rich, velvety white wine gravy. Balay Remedios is more than just an architectural marvel; it is a living storyteller of Iloilo’s high-society golden era, wartime survival, and modern cultural rebirth. #BalayRemedios #IloiloFoodGuide #IloiloCity #IloiloFoodTrip #Philippines
