Welcome to Part 12 of my 🎃 fall recipe series 🎃, where I show you all kinds of delightful fall recipes that aren’t just pumpkin and casserole. Baked Potato Soup 🥣 🧡 It's cozy, cheesy, potato-y... ready to warm your heart and your belly as the cool weather comes in. INGREDIENTS 4-5 potatoes, baked and slightly mashed (I used russet, but Yukon gold is great too) 8 strips or about a half pack of bacon 2tbsp butter 1 onion, diced Garlic to taste 1/4c all purpose flour 3c milk 2c chicken broth Seasoning: salt and black pepper (to taste) chicken bouillon, onion powder, garlic powder, parsley, pinch of cayenne, (optional) Toppings: cheddar cheese, sour cream, bacon, and green onions INSTRUCTIONS In a large pot or dutch oven, cook cut bacon until crispy. Remove with a slotted spoon and set aside. (You can drain or keep your bacon grease, I did not remove any). Add butter and onion, sauté until the onion is softened and nearly translucent. Add the garlic and cook until fragrant. Add in the flour and stir for about 1 minute then slowly whisk in milk, small amounts at a time. Repeat same method with the broth. Season and mix. Add your potatoes and mash to your preferred consistency. Serve hot and top with more cheese, sour cream, bacon, and green onions.
