Venison short loin cooked this way is perfect for any holiday dinner and these roasted brussels are the perfect side to go along with it!   Seared to perfection, butter basted, and served up with a delicious pan sauce. A simple and delicious way to cook up this Silver Fern Farms Venison Short loin!    Recipe: * Venison Short Loin  * Salt, Pepper, and Garlic powder seasoning blend * 2 tbsp Avocado oil * 3-4 tbsp of unsalted butter * 1 shallot, halved * 3-4 cloves of garlic, crushed * 2 sprigs of rosemary * 2 sprigs of thyme * 1.5 cups of beef stock * 1 tbsp cold unsalted butter * 1 lb of brussel sprouts, washed and halved  * 1.5 tbsp Avocado oil * Salt & pepper * 2 tbsp soy sauce * 2 tbsp  maple syrup * 1 tbsp rice wine vinegar 1. Start by preheating the oven to 425 F, Prep the brussel sprouts by trimming, halving, and coating in oil and seasoning. Place them on a baking sheet cut side up and place in the oven to roast for 20-25 minutes. 2. Heat a heavy bottom skillet over medium high heat and get the Venison seasoned and ready to cook. Once the pan is hot, add the oil and let that heat up for 90 seconds, then place the venison short loin in to sear for about 2 mins per side, flipping every 30 seconds. 3. Remove the venison and lower the heat to medium low, then add the butter, shallot, garlic, and herbs. Let this melt, then place the venison back in and spoon the infused butter over the venison. If the butter isnt slightly foamy, raise the heat. Continue until the Venison reaches 123-125 internal, remove and rest. 4. In the same pan, add beef stock and use that to deglaze the pan, let simmer and reduce for 5 minutes, then add cold butter and whisk. Remove and set aside. 5.  Remove the brussel sprouts when they are tender and golden brown. Mix together the soy sauce, maple syrup, and vinegar, then toss the brussel sprouts to coat just before serving. 6.
