@mamawgailcooks: My Zucchini & Potato Bake 🥔🥒 Ingredients • 4 potatoes, peeled and sliced • 1 zucchini, peeled and sliced • ½ small onion, chopped • 1 stick butter, divided • Salt & pepper, to taste Instructions 1. Preheat the oven to 400°F. 2. Butter the bottom and sides of a 9x9-inch baking dish. 3. Layer the sliced potatoes in the bottom of the dish, then add a layer of sliced zucchini. 4. Season with salt and pepper. 5. Repeat the layers until all the potatoes and zucchini are used. 6. Sprinkle the chopped onion over the top. 7. Slice the remaining butter and place it evenly over the top. 8. Cover tightly with aluminum foil. 9. Bake for 45 minutes to 1 hour, or until the potatoes are tender.
