Crispy Pumpkin Flatbread ✨ It’s not the pumpkin season I know, but this flatbread is too delicious to not make 😉. #flatbread #pumpkin #DinnerIdeas #EasyRecipes  📖Ingredients: For the Filling 	•	3 cups pumpkin, finely chopped 	•	1 large onion, finely chopped 	•.    3 tbsp olive oil 	•	4 cloves garlic, minced 	•	2 tsp fresh chili, chopped (optional) 	•	1 tsp ground black pepper 	•	1 tsp ground coriander 	•	½ tsp salt 	•	1 tsp chili flakes For the Dough 	•	500 g all-purpose flour 	•	2 tsp salt 	•	200 ml lukewarm water (plus extra if needed) For the Yogurt Sauce 	•	2 tbsp garlic mayonnaise 	•	1 tbsp plain yogurt 	•	A pinch of salt 	•	1 tbsp fresh dill, finely chopped 📖Instructions: Prepare the Dough 1. In a large bowl, combine the flour and salt. 2. Gradually add the lukewarm water while mixing until a dough forms. 3. Knead the dough for 8–10 minutes, until smooth and elastic. If it feels sticky, add a little extra flour as needed. 4. Cover with a clean kitchen towel or plastic wrap and let the dough rest for 20 minutes. Prepare the Filling 1. Heat a pan over medium heat and sauté the onions until soft and translucent. 2. In a large mixing bowl, combine the chopped pumpkin, chilli, and garlic. 3. Add the sautéed onions to the bowl. 4. Add the black pepper, ground coriander, salt, and chilli flakes. 5. Mix everything together until well combined. Assemble the flatbread  1. Divide the rested dough into small, equal-sized balls (about the size of a golf ball). 2. On a lightly floured surface, roll each ball into a thin circle, approximately 20 cm in diameter. 3. Spread a thin, even layer of the filling over one half of each dough circle, leaving a small border around the edge. 4. Fold the other half over to form a semicircle. 5. Press and pinch the edges firmly to seal. Cook the flatbread  1. Heat a non-stick frying pan or skillet over medium heat and lightly brush it with oil. 2. Cook one bolani for 2–3 minutes, or until the underside is lightly golden and crisp. 3. Flip and cook the other side for a further 2–3 minutes. 4. Repeat with the remaining dough and filling, brushing the pan with oil as needed. Prepare the Yogurt Sauce 1. In a small bowl, combine the garlic mayonnaise, yogurt, salt, and fresh dill. 2.
