SIMPLE LIVER RECIPE  DID YOU KNOW?  Liver is packed with iron which is great for supporting healthy red blood cells. It’s also high in protein which helps with muscle growth and repair. - A great source of Vitamin A which supports healthy eyes and your immunity. And It’s nutrient dense since a little liver gives you a lot of essential vitamins and minerals. Ingredients * Liver @Dannykam butchery  * Onion * Garlic * Ginger * Tomatoes * Coriander stems * Coriander leaves * Oil * Royco cube * Curry and spice powder  * Salt, to taste - Before cooking tenderize the liver Best option: yoghurt 1. Cut the liver into bite sized pieces. 2. Put it in a bowl and cover with plain yoghurt. 3. Mix well and leave for 30 minutes to 1 hour in the fridge. 4. Drain and lightly rinse or wipe off the excess yoghurt, then pat the liver dry before cooking. - Yoghurt is a great option because its mild acidity helps tenderise the liver without being as harsh as strong acids. Other options I have personally used before or keep using from time to time:  * Milk: Soak for 30 to 60 minutes, then drain and pat dry. * Vinegar,salt and water: Mix water with a small splash of vinegar and a little salt. Soak for 15 to 20 minutes only, then drain and rinse. Don’t use too much vinegar or leave it too long, as it can affect the texture. METHOD:  1. Heat a little oil in a large pan over medium heat. 2. Add the liver in a single layer and cook for about 2 to 3 minutes per side, just until browned on the outside. Don’t cook it through at this stage. Remove and set aside. 3. In the same pan, add a little more oil if needed. Add the onions and cook until softened and lightly golden. 4. Add the garlic, ginger and coriander stems. Cook for 30 to 60 seconds. 5. Add the tomatoes, curry powder, mixed spice and crumbled Royco cube. Cook for 4 to 6 minutes, until the tomatoes break down into a thick sauce. 6. Return the liver to the pan and toss everything together. 7. Cook for another 2 to 4 minutes, depending on the size of your pieces. 8. Finish with fresh coriander leaves and serve immediately.
