You can never judge Quill for doing it. He was grieving the woman he loved, who had just been killed by Thanos. The version of Quill who doesn’t punch Thanos is a Quill who never loved Gamora. :)

The thing is, it's easier to blame Peter for what he did than acknowledge that grief makes us irrational. Imagine knowing that the woman you loved is killed by her own father? Would you still have the time to stop yourself from getting angry? To calm yourself and wait for the opportunity to strike? I bet you couldn't because if you could? Can you even tell yourself that you really loved that woman? Grief is not strategic and when your reality crumbles down right in your face, would you still have the guts to remain unmoving? To Peter no one matters more than Gamora, not even Stark, maybe not even the galaxy. Most of you could say he should have waited until their mission was over, but grief does not wait for you to process it. It strikes whenever it want, leaving you dumb and helpless.

The older I get, the more I understand Thanos. Not because I agree with the Snap, but because I understand his goal. He believed sacrificing half of all life would restore balance, preserve resources, and give the other half a chance to survive. His intentions made sense. His actions didn’t.
