Great BBQ ribs should have a clean bite. The meat should pull away from the bone easily, but still have enough structure to hold together. Tender. Juicy. Smoky. With the perfect texture. It’s about finding that sweet spot where the collagen has melted, the fat has rendered, and the ribs are tender while still keeping their integrity. When ribs fall apart completely, they can become: - Mushy - Overcooked - Lacking texture - Difficult to slice and serve The best BBQ ribs should have: - A flavorful bark - A juicy interior - Tender meat - A clean bite So how do you know when your ribs are ready? Use the toothpick test. Insert a toothpick between the bones in the thickest part of the rib. When it slides in with little resistance, they’re ready. You can also use the bend test. Pick up the rack with tongs and the ribs should bend with the surface cracking slightly. That’s the BBQ sweet spot. Tender enough to impress… But still with that perfect bite.
