From Wilderness to table-  Arizonas Mesquite Bean flour.  Beans are ready to harvest June-September when the pods are yellow and can easily be picked off the tree.  Take caution collecting them off the ground. Pods that have been on the ground are more susceptible to bugs and mold. As long as you collected your beans from the tree there is no need to wash them, do you want them as dry as possible. Preheat your oven to 400°F and spread out your mesquite beans on a baking sheet and roast them for 8 to 10 minutes or until they smell fragrant and are golden in color.  Let the pods cool completely and then in small batches blend them up in a high speed blender until they create a fine powder.  Sift the flour through a fine mesh strainer, compost any larger pieces, and what remains is your flour.  Mesquite flour is a denser flour, so it does not work well for breads or lighter pastries.  It works well for cookies, pancakes, corn cakes, etc.  This tree is lush in our Arizona landscape and can be used for flour, syrups, you can even make your own version of coffee with roasted mesquite beans.
