Add the fried potatoes to the cod and onion mixture, then pour in the beaten eggs, stirring gently until the eggs are just starting to set. 8. Remove from heat once the eggs are mostly cooked but still slightly runny. 9. Garnish with chopped parsley and black olives. 10.
