Definately going to try this! I make a version of it with chicken breasts. I cook chicken breasts in the crackpot w enchilada sauce for 4 hours on high, shred the chicken, then add a can of bush's taco Fiesta blackbeans, a can of south west corn, cut up tortillas and shredded cheese and cook for a little longer. My kids love it.

I mix all in one bowl - cut up corn tortillas enchilada sauce cooked ground beef or shredded chicken shredded cheese diced olives mix and dump in baking dish cover with cheese and bake walla my boys would devour it

I've done this before, but I fry the cut up tortillas first in a Lil oil, take them out, then brown the meat, same pan then add tortillas back, add sauce, & cheese, put the lid on and I call it 30min enchilada hamburger helper 😆 🤣 it's very yummy and fast 🥰

my youngest favorite meal is white chicken Enchalada casserole. we do canned chicken, cut up tortillas, cream of chicken, cream cheese, sour cream, black olives and cheddar cheese. mix it all up, put it in a 9x 13 and bake. she is 16 and makes it all the time

Try king ranch casserole but instead of tortillas use crushed Doritos and tortilla chips! Soooo good

Fiesta brand makes a really good enchilada seasoning. I order it online. If you fry some of those tortillas first, (or all) they'll hold up better. Definitely going to try this!
