Injera is a large, round, soft flatbread made mainly from teff, a tiny ancient grain that grows in Ethiopia mostly in shewa and Gojjam region. The batter is mixed with water and left to ferment for a few days, giving injera its slightly sour, tangy flavor. It is then cooked on a large, flat griddle, creating thousands of tiny holes on the surface that soak up sauces and stews. People don’t usually eat injera by itself. Instead, it is spread on a large tray and topped with a variety of dishes such as spicy meat stews, lentils, vegetables, and chickpeas. Everyone shares the same platter, tearing off pieces of injera with their right hand and using them to scoop up the food. There are no forks or knives—injera is the utensil. Sharing injera is about more than eating. In Ethiopian culture, it represents hospitality, family, and community.
