Replying to @Abby Tingle Full recipe for these Iced Gingerbread Muffins below🤎 Ingredients: •2/3 cup brown sugar •1/3 cup granulated sugar •2 eggs large •1/3 cup unsalted butter, melted and slightly cooled •1/3 cup vegetable oil •1/3 cup molasses •1 cup whole milk •1 tsp vanilla extract •3 cups all purpose flour •3 tsp baking powder •1/2 tsp baking soda •1 tsp ground cinnamon •1 tsp ground ginger •1/4 tsp ground nutmeg •1/2 tsp salt Icing: •1 cup powdered sugar •1 Tbsp whole milk •1/2 tsp vanilla extract Preheat oven to 425°F. Line a muffin tin with cupcake liners and set aside. *This recipe yields about 12 regular-sized muffins. In a medium bowl, whisk together the brown sugar, granulated sugar, eggs, melted butter, and oil. Add in the molasses, milk, and vanilla. Whisk until fully combined and set aside. In a large bowl, add in the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Stir until evenly distributed. Now pour the wet ingredients into the dry mixture. Fold together until combined, batter will be lumpy. Do not over mix or you will have dense muffins! Using a cookie scoop, scoop out the batter into each muffin cup. Fill to the very top to get bakery style muffin tops. Bake for 5 minutes at 425°F, then lower the oven temp to 350°F and bake for another 12-15 minutes. The high temp in the beginning will help the muffins rise well. While muffins are baking, prepare the icing. In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth. Set aside. Muffins are done baking when a toothpick inserted into center comes out clean. Remove them from the oven and allow to cool in the pan for 10 minutes before transferring to wire cooling rack. While muffins are still warm, dip each one into the icing. Make sure to coat the entire tops of each muffin. Shake the excess off and place onto wire cooling rack to set. Now enjoy! These muffins can be kept in an airtight container at room temperature for about 3 days before going into the fridge. #gingerbreadmuffins #gingerbreadmuffinrecipe #gingerbread #gingerbreadrecipe #christmasmuffins #christmasbreakfast
