Good morning, my dear friends! ☀️💚
Today’s breakfast is made entirely from food we grow right here on our homestead in the jungle.
This morning I made cassava and chaya waffles with homemade cottage cheese. The waffle batter contains cassava, chaya, eight eggs, a little salt, and baking powder. Everything is homegrown except for the salt and baking powder.😂
The vegetables come from our garden that we planted and care for ourselves, and the cottage cheese is made from the fresh milk of our cows. There is something so special about preparing a meal completely from the land around us.
I love adding chaya because it’s such a nutritious leafy green. Before mixing it into the batter, I cook the leaves for about 15 minutes and then chop them finely.
You may have noticed that I’ve been filming more videos in my kitchen lately. My husband recently installed a new light, and it has made such a big difference! Before, my kitchen was always a little too dark for filming.
I’m also planning to give my kitchen a small makeover while we wait to move into our brick house. I don’t know exactly when that day will come, but until then I want to make this little kitchen even cozier.
