Starting from old dough is pretty much like starting with stiff starter, which at 50% hydration is essentially a dough. Obviously you bake often. What is the longest you kept the dough until you used it in a new dough?

Many years ago back in Italy, my mother in law would make bread that way every week for the family. After mixing the large quantity of dough, she would reserve a piece and use it the next time she baked. I always wondered how it worked. Thanks for sharing.

a few weeks ago. my bf was helping me with my dough cuz i was at work. he started my dough used my starter then threw my entire starter out and washed the jars :/ I did some research and my 5 month old starter was saved because of the dough, I took a small piece off, fed it, and my starter was back! love science!
