You gotta do it with dry ice. The ice cream center needs to be well below freezing. That’s how they do it at the carnival trailers.

In Australia we have this at some Chinese restaurants! But they use a thicker cake-like batter so it protects it more

My favorite restaurant back in my childhood home town did deep fried ice cream... so damn good! Gotta hit it with a drizzle of honey or maple syrup though!

Bennigans used to just wrap the extra cold ice cream in an egg roll wrapper, fry, and then sprinkle with cinnamon & sugar.

first time I tried fried icecream was my 18th birthday. Went to dinner at a Chinese restaurant with the family, when the chef found out it was my birthday, he brought out the fried icecream with a candle in it and sang me Happy Birthday in broken English. He was so sweet and that icecream was delicious, tbh I thought it was a baked potato at first and I was so damn confused 😂
