Seafood Risotto Frutti di Mare Prep time: 15 minutes Cook time: 40 minutes Total time: 55 minutes Serves: 4 Ingredients For the seafood risotto 1 1/2 cups Arborio or Carnaroli rice 8 tablespoons extra-virgin olive oil, divided 4 tablespoons butter, divided 1 small onion or leek, finely diced 1 1/2 cups dry white wine, divided 1 1/2 cups cherry tomatoes, quartered 5 garlic cloves, grated 3/4 lb wild shrimp, peeled and cleaned, shells reserved for stock 1/2 lb littleneck clams or baby clams, scrubbed clean 1/2 lb mussels, cleaned and beards removed Meat from 1 cooked crab leg 5 tablespoons flat-leaf Italian parsley, minced 1 teaspoon saffron threads 1 lemon Sea salt, to taste Black pepper, to taste Red pepper flakes, to taste For the seafood stock 2 quarts water Shells from the shrimp Shell from the crab leg, optional 1 carrot, cut into chunks 1 celery stalk, cut into chunks 8 parsley sprigs 2 bay leaves 1/4 small onion 10 peppercorns 1/2 teaspoon sea salt Pinch of red pepper flakes Equipment Large pot for stock Fine mesh strainer Heavy-bottom saucepan or Dutch oven Large stainless steel skillet Second skillet with lid Wooden spoon Silicone spatula Ladle Cutting board Sharp knife Paper towels Serving bowls Instructions Start with the seafood stock. Add the water, shrimp shells, crab shell if using, carrot, celery, parsley sprigs, bay leaves, onion, peppercorns, salt, and red pepper flakes to a large pot. Bring it to a gentle simmer over low heat and cook for about 1 hour. Strain it through a fine mesh strainer, then stir in the saffron and let it steep. Keep the stock warm while making the risotto. In a heavy-bottom saucepan, heat 3 tablespoons butter and 1 tablespoon olive oil over low heat. Add the finely diced onion or leek with a pinch of sea salt and cook for about 10 minutes, until soft and translucent. Don’t brown it. Risotto starts gently, not aggressively. Add the rice and stir for a few minutes, until the grains look slightly toasted and no longer completely opaque. This helps the rice hold its shape while still becoming creamy later. Pour in most of the white wine, saving about 1/4 cup for the seafood. Stir until the wine is almost absorbed. Don’t let the rice dry out completely. Risotto should always stay moist and moving. Begin adding the warm saffron seafood stock one ladle at a time. Stir often and wait until the rice absorbs most of the liquid before adding more. Keep a gentle ripple in the pan the whole time. The rice should never sit dry on the bottom (that’s where risotto gets chalky or sticks). Continue cooking for about 20 minutes, until the rice is tender but still has a little bite in the center. The texture should look like thick cream, not dry rice and not soup. Remove from the heat and stir in the remaining 1 tablespoon butter for a silky finish. About 10 minutes before the risotto is done, cook the seafood. Pat the shrimp dry with paper towels, then toss them with a drizzle of olive oil, a pinch of salt, black pepper, red pepper flakes, and the grated garlic. Heat 3 tablespoons olive oil in a stainless steel skillet over medium-low heat. Add the shrimp and cook for only 1–2 minutes, just until they curl and turn pink. Transfer them to a bowl and squeeze a little lemon juice over them. Don’t overcook them here; shrimp become rubbery very fast. In the same skillet, add the quartered cherry tomatoes with a pinch of salt. Pour in the reserved 1/4 cup white wine and scrape the bottom of the pan. Cook for a couple of minutes, until the tomatoes soften and release their juices. Add the cooked shrimp back to the tomato pan with the crab meat and 3 tablespoons parsley. Toss gently, add a little more lemon juice and olive oil, then set aside. In another skillet, heat the remaining 2 tablespoons olive oil over medium heat. Add the clams and mussels with a splash of stock or wine. Cover with a lid and cook for 3–5 minutes, until they open. Discard any shells that stay.!
