Because the weather is so unpredictable other than nigh constant wind, at Blackthorn, we chose to take the long way round in order to reduce our energy consumption. Natural heat is insufficient on the West Coast for seawater evaporation so instead the Blackthorn Towers use the wind. Over time, nearly all of our evaporation is achieved by this phenomenal natural force - reducing the water-content of each back so that 26,000 litres of seawater becomes just 2,000 litres of concentrated brine, ready for crystallisation, yet having used 0 kJ of man-made energy. In a conventional pan-only process it would require nearly 1,000 kilojoules for every kilolitre of seawater evaporated to the same concentration. Looking back further, when seawater was boiled over coal fires to make salt, that figure rises to around 1,680 kJ of coal energy per kilolitre to get to the same concentration. The Thorn Towers won't ever be the quickest way to make sea salt, but to our minds they are one of the most appropriate- even in a cooler, wetter climate, it is possible to produce exceptional sea salt by working with nature, rather than relying on energy-intensive methods or that often invisible sun.
