Funnily enough, that's actually exactly how anesthesia works! It blocks your ability to record memories, so you just don't remember any of the surgery happening because your brain is basically unable to "write it down" per se.

I've long wondered what restoration magic would do to a trans person. Like, the magic knows what to change in the body somehow, so does it go by the person's mental image of self? It can't go by some biological function from birth, because it does change birth defects. Not looking for arguments here, just a curious question about literal magic from fiction.
