HOMEMADE MARSHMALLOWS- so cute to make for the holidays! 🎄🎀⛄️🎅🏻 2 tbsp gelatin (or 2 packets) 1 cup cold water 2 cups sugar 1 tbsp vanilla extract 1/2 cup powdered sugar 2 tbsp cornstarch Neutral oil spray Cover glass dish or small sheet pan with plastic wrap & spray with neutral oil spray. In a small bowl, combine gelatin with 1/2 cup cold water. Let sit to bloom. In a small saucepan, add 2 cups of sugar & other 1/2 of cold water. Turn on heat and let sugar dissolve over medium heat. Turn on high heat, let sugar & water come up to a boil and add in your gelatin. Let everything come to a boil and turn back to medium heat. Keep on stove until temperature comes to 245 degrees F. (About 8-10 minutes). Remove from heat and slowly pour into stand mixer with whisk attachment. Mix on low for about 2-3 minutes, add your vanilla extract, then turn mixer gradually to high for about 8-10 minutes (until you see marshmallow fluff and it has expanded in volume). Once finished, take a rubber spatula and spray with neutral oil spray. (It gets very sticky). Scrape along the sides of bowl and place into pan. Continue spraying your rubber spatula with spray and spread marshmallow mixture evenly. In a small bowl, combine cornstarch & powdered sugar. Mix well and dust the top of the marshmallows with this mix. Let sit for 4 hours minimum to overnight. Once finished setting, cut up into desired marshmallow shapes- you can either cut them into squares or use cookie cutters to make them festive!
