The guillotine threat is low here because the shot is structurally sound. With proper alignment of the hips, spine, and neck, it becomes very difficult for the opponent to break posture and force the head down. The posted leg also helps off-balance the opponent, which can make their guillotine grip less stable. If they overwrap the neck, keeping the eyes up and across their back helps you continue climbing and potentially take the back instead of getting stuck underneath
