Creamy Tuscan salmon pasta ✨ Tuscan salmon pasta Ingredients Salmon - 4 salmon filets - 1/2 tbsp @Algae Cooking Club roasted garlic algae oil (or any oil of choice) - 1 tsp smoked paprika - 1 tsp garlic powder - 1 tsp oregano - 1/2 tsp basil - 1/2 tsp old bay - Salt and pepper to taste Pasta/sauce - 12 oz fettuccine - 3 tbsp butter - 1 tbsp sun-dried tomato oil - 1 shallot, diced - 6 garlic cloves, minced - 3 oz grape tomatoes, sliced - 1/4 cup sun dried tomatoes - 1 1/2 cup heavy cream - 1/3 cup white wine or chicken broth - 2 tbsp tomato paste - 1 cup Parmesan cheese, grated - 2 cups spinach - 2 tsp oregano - 2 tsp basil - 1 tsp garlic powder - 1 tsp red chili flakes (optional) - Salt and pepper to taste Instructions - Bring a large pot of well-salted water to a boil. - Cook fettuccine according to package instructions until al dente. - Reserve 1/4 cup pasta water, then drain and set aside. - Pat salmon filets dry. - Rub with roasted garlic oil, then season with smoked paprika, garlic powder, oregano, basil, Old Bay, salt, and pepper. - Heat a large skillet over medium-high heat. - Sear salmon 3–4 minutes per side until golden and cooked through. Base salmon in the pan dripping. - Remove from skillet and set aside. - In the same skillet, reduce heat to medium. - Melt butter and add sun-dried tomato oil. - Sauté shallot for 1–2 minutes until soft. - Add garlic and cook until fragrant (about 30 seconds). - Stir in grape tomatoes and sun-dried tomatoes; cook 2–3 minutes. - Add seasonings: basil, red chili flakes, oregano, garlic powder, salt and pepper. Stir until smooth evenly incorporated. - Stir in tomato paste until fully incorporated. - Add white wine (or chicken broth) and simmer 2–3 minutes to reduce slightly. - Pour in heavy cream and bring to a gentle simmer. - Add Parmesan, stir until smooth and slightly thickened. - Fold in spinach and cook just until wilted.
