Baingan Ka Bharta - 🍆 Baingan Ka Bharta Ingredients: * 3 large baingan (eggplants), cut into 2 pieces from the center * 1 tomato * 6–8 garlic cloves * 5–6 green chilies * 2 onions, finely chopped * 1 tsp cumin seeds * Salt to taste * ½ tsp turmeric powder * 1 tsp red chili powder * 1 tsp coriander powder * Fresh coriander, chopped * Oil as required Method: 1. Heat some oil on a tawa. Add the baingan, tomato, garlic cloves, and green chilies. 2. Sauté everything until nicely fried and the vegetables develop a good color. 3. Transfer everything to a plate and mash well until you get a smooth mixture. 4. Heat oil in a pan and add cumin seeds. Let them sizzle. 5. Add chopped green chilies and sauté for a few seconds. 6. Add chopped onions and fry until golden brown. 7. Add salt, turmeric powder, red chili powder, and coriander powder. Cook the spices well until the oil separates. 8. Add the mashed baingan mixture and mix well. 9. Cook on low flame until the oil separates and the bharta becomes rich and well cooked. 10.
