Its actually serves a lot of purposes stops them bumping their teeth and lips on the mic, acts as guide / spacer so they can ensure they are not too close the the mic, it muffles and helps plosive control the poping of Ps and Ds, it can slightly warm up the tone of the voice also it used to be if they are a heavy nose breather can reduce breathing but with new mics thats almost completely eradicated now and ita a stylistic choice.
