Corn Pasta Salad 🌽🍝 Creamy, smoky, cheesy, and packed with bold flavor—this pasta salad is perfect for BBQs, potlucks, meal prep, or an easy summer dinner. Ingredients Pasta Salad 1 lb rotini pasta, cooked and cooled 2–3 lbs boneless, skinless chicken thighs BBQ seasoning 2 (15 oz) cans corn, drained 1 lb bacon, cooked and chopped 1/2 red onion, diced 2 jalapeños, diced 1/4 cup cilantro, chopped 1 cup Cotija cheese, crumbled Dressing 2 cups Mexican crema Juice of 1 lime 1 tbsp cumin 1 tbsp chili powder 1 tbsp garlic powder 1 tsp onion powder 1 tsp Tajín Salt and black pepper, to taste Instructions Season the chicken with BBQ seasoning and grill until fully cooked. Let it rest, then dice. Cook the rotini until al dente. Drain, rinse with cold water, and cool completely. Char the corn in a hot skillet for 5–7 minutes. Whisk together all dressing ingredients until smooth. Combine the pasta, chicken, corn, bacon, red onion, jalapeños, cilantro, and Cotija cheese in a large bowl.
