@irishbakerabroad: A Simple Chocolate Traybake 👌🏻😋 Recipe 2 medium/large eggs 100g of granulated sugar 100g of dark soft brown sugar 100ml of vegetable oil 300ml of buttermilk 1 tsp vanilla extract 120ml of boiling water or brewed coffee 200g of plain flour 70g of unsweetened cocoa powder 1 tsp of baking powder 1 tsp of baking soda Pinch of salt Use buttermilk if you can get some. If not add about 2tbsp of vinegar or lemon juice to 300ml of regular milk, stir and let it stand for about 5-10 minutes. This helps to activate and neutralize the baking soda and make the cake more moist. I used vegetable oil but yiu can switch it out with butter if you prefer that. The amounts are the same. Oil makes it more moist. It’s a matter of preference Coffee can be used in place of the water. This adds a depth of flavor and helps to intensify the chocolate flavor. This was baked in a 20cmx30cmx5cm tin. It has been greased with butter and dusted with flour. We cut slices from the tin. This also keeps the cake nice and moist. If you prefer to remove the cake just line it with parchment paper 😊 Icing 335g of icing sugar 50g of cocoa powder 85g of melted butter 60ml of milk 1 tsp vanilla extract The icing is optional. If you prefer something less sweet you could go with a semi sweet chocolate or dark chocolate ganache Bake the cake at 180C for 30 minutes exactly. Check with a skewer or knife after just to be sure it’s fully baked. I had some Icing left over so 3/4 of that recipe would probably do it. Scatter sone M&M’S on top for the kids 👌🏻 Give it a go!
