REALISTIC DINNERS EP. 1 🌮 Enchiladas Suizas + Easy Street Corn Salad I’m officially shopping and cooking for the version of myself who actually exists 😂 I love cooking, but every dinner does NOT need to be a whole production. The goal of this series: quick dinners, minimal effort, minimal cleanup, and just enough shortcuts to make life easier without feeling like we’re sacrificing a good homemade-ish dinner. Tonight’s dinner was enchiladas suizas with probably the easiest street corn salad I’ve ever made, and apparently both need to go into the regular rotation. ENCHILADAS SUIZAS Ingredients: About 3 cups shredded rotisserie chicken ½ cup salsa verde 1 (4 oz) can diced green chiles 4 oz cream cheese, softened 1 cup shredded cheese, divided 1 Tbsp taco or fajita seasoning 7–8 flour or corn tortillas For the sauce: 1 (10 oz) can green enchilada sauce 1 cup salsa verde ½ cup sour cream For topping: Sliced avocado Chopped cilantro Directions: Preheat oven to 375°F. Mix the shredded chicken, ½ cup salsa verde, green chiles, cream cheese, about ½ cup shredded cheese, and taco or fajita seasoning until combined. In a separate bowl, mix the green enchilada sauce, 1 cup salsa verde, and sour cream. Spread a thin layer of sauce over the bottom of a baking dish. Divide the chicken filling between your tortillas, roll them up, and arrange seam-side down in the dish. Pour the remaining sauce over the enchiladas and top with the remaining shredded cheese. Bake for about 15-20 minutes, or until everything is hot and bubbly and the cheese is as browned as you like. Top with avocado and cilantro. EASY STREET CORN SALAD / ESQUITES 🌽 Ingredients: 1 (12 oz) steam-in-bag frozen corn 2-4 Tbsp mayonnaise Splash of lime juice (bottled) ¼ tsp chili powder, plus more for topping ¼ tsp paprika ¼ tsp cumin Salt & pepper to taste 1–2 Tbsp chopped cilantro Queso fresco for topping Directions: Microwave the corn according to the package directions. Carefully open the bag and add the mayo, lime juice, chili powder, paprika, cumin, salt, pepper, and cilantro. You can attempt to mix it directly in the bag like I did in the name of dirtying one less dish 😂 or transfer it to a bowl like a reasonable person. Mix everything together and finish with crumbled queso fresco and another sprinkle of chili powder. That’s it!
