We did this in 2017. We were advised to do this in Iceland because of the higher rate of tax. We kept every goods receipt and were reimbursed in Keflavik airport at the tax booth.

Because the UK is no longer part of the EU, UK residents are eligible to shop tax-free in Europe. However, you must meet the specific spending limit at a single store on the same day to qualify; you cannot combine receipts from different shops.
