Thank god it’s Tomatini season again. If there’s anything I love more than a classic dirty martini, it’s one made with cherry tomatoes. I’ve made plenty of versions over the years, but I think this one might be my favorite. Especially when enjoyed with a side of sunset. 🍸🍅 Tomatini Makes 1 cocktail 2 oz vodka 2 fresh cherry tomatoes, halved 2 basil leaves 2 pickled cherry tomatoes 2 teaspoons brine from the pickled tomatoes A few drops of extra virgin olive oil • Spoon the tomato brine into a chilled martini glass. • Thread the pickled tomatoes onto a cocktail pick. • Add the vodka, fresh cherry tomatoes, and basil to a cocktail shaker. Muddle well. • Fill the shaker with ice and shake vigorously for 30 seconds. • Strain into the prepared glass. • Garnish with the tomato pick and finish with a few drops of extra virgin olive oil. Serve with extra pickled tomatoes and plenty of potato chips.
