I was on my fifth bag of chips when I realized I needed to change 😭 I’ve been making these hearty pasta salads for about a month now, and they have my lunches so much better. I make a big one on Sunday or Monday, and it usually lasts for 3-4 days. This Steak Chimichurri Pasta Salad with Vegetables and Crushed Chickpeas was one of my favs - see below for the recipe! Steak Chimichurri Pasta Salad * Spread 1 can chickpeas on a baking sheet and bake at 450F for 15 mins. Take out and press with a fork. Add ½ tsp paprika, ½ tsp garlic powder, salt, & pepper. Bake for another 12-15 mins, until crispy. * Sprinkle 1 lb steak with salt and pepper on both sides, Heat skillet over medium-high heat, add 1 tbsp neutral oil. Add steak and cook for 3-4 minutes per side, until seared on both sides. Remove steak and let rest before cutting * Add ½ lb asparagus to skillet, sprinkle with salt and pepper, Cook until it starts to brown and then remove. Add 1 sliced red onion and 1 sliced red pepper and cook until softened, 5 minutes. Add 1 cup cherry tomatoes and cook for another 2-3 minutes. * Meanwhile, cook 1 lb pasta until al dente, then drain. * To make the dressing, combine ½ cup olive oil, ¼ cup red wine vinegar, 1 bunch parsley, chopped (about 1 cup), 1 small red chili, deseeded and chopped, 2 garlic cloves, ½ tsp oregano, pinch of salt and pepper. Whisk together. * In a large bowl, add pasta, steak, chickpeas, vegetables, and dressing. Toss together. Refrigerate until cold, then serve. If the salad dries out , add a splash of olive oil and vinegar.
