Recipe Name: Slow Cooker Brown Sugar Glazed Pork Loin with Sweet Potatoes Ingredients 1. 3 lbs pork loin roast 2. 4 medium sweet potatoes, cubed 3. 1/2 cup brown sugar 4. 1/4 cup honey 5. 2 tbsp soy sauce 6. 1 tbsp Dijon mustard 7. 4 cloves garlic, minced 8. 1 tsp smoked paprika 9. 1 tsp black pepper 10. 1 tsp salt 11. 1 cup chicken broth 12. 1 tbsp chopped parsley Recipe 1. Place sweet potato cubes in the bottom of the slow cooker. 2. Season the pork loin with salt, pepper, and paprika. 3. Set the pork on top of the sweet potatoes. 4. In a bowl, whisk together brown sugar, honey, soy sauce, mustard, and garlic. 5. Pour the glaze mixture over the pork. 6. Add chicken broth around the sides of the slow cooker. 7. Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours. 8. Baste the pork with cooking juices once or twice if possible. 9. Cook until the pork is tender and fully cooked. 10. Carefully transfer the pork to a cutting board. 11. Spoon some of the glaze and sweet potatoes around the roast. 12. Slice and serve with extra sauce from the slow cooker.
