Meatloaf is basically just a giant meatball you can slice. The mix-ins are very similar, but traditional American meatloaf has a sweet ketchup-based topping.  I didn’t grow up eating meals like this very often. My dad is from France and did a lot of the cooking, so our dinners looked a little different. My husband grew up eating more classic comfort meals like meatloaf, so I started finding ways to make them in a way that our whole family would enjoy. You’ll probably notice I skipped the mashed potatoes 😅 I simply don’t like them very much, and neither do my kids, so we went with simple vegetables and dinner rolls instead. Meatloaf (Makes 2 Loaves) Loaf: 2.5 lbs LEAN ground beef 3 eggs 1½ cups Italian breadcrumbs ½ cup panko breadcrumbs 1 cup milk 2 tsp salt 1 tsp black pepper 1 tbsp dried parsley 1 tbsp dried onion flakes 2 tsp garlic powder 2 tbsp Worcestershire sauce 1 tsp mustard powder 1 cup Grated sharp cheddar cheese Topping: 1 cup ketchup 3 Tbsp brown sugar 2 tsp yellow mustard Dash of Worcestershire sauce Preheat oven to 350°F. In a large bowl, combine the milk and breadcrumbs first and allow the breadcrumbs to absorb the milk for a few minutes. Add the rest of the loaf ingredients. Mix until just combined, being careful not to overmix. Divide mixture into two loaf pans and bake for 30 minutes.  While baking, stir together the topping ingredients. Remove meatloaf from the oven, spread topping evenly over both loaves, then return to the oven for another 25 minutes or until the center reaches at least 160°F.
