It’s called climb cutting. He’s going with the grain the same direction The router bit is spinning to avoid tear out each pass. He’s taking a little bit more material off. His final pass will be a regular pass going the opposite direction The bit is spinning.

I would recommend going even further than a large baseplate. I'd use a straight piece of 1*6 board longer than the top of the workpiece. this way it ensures it stays dead plumb to the top surface.

"unusual for rounded corners"? I've seen many antiques with rounded corners, edges, and many other rounded items. Wood workers have been doing rounded items forever so can't agree with your statement of "unusual"
