she did not have ibs. See the movie again ... Charlotte was extremely paranoid about getting traveler’s diarrhea (often called "Montezuma's Revenge"). To avoid getting sick, she refused to eat any local Mexican food or drink local water, surviving almost entirely on pre-packaged pudding cups she brought from home. However, her precautions fell apart when she accidentally opened her mouth and swallowed a little tap water while taking a shower. Shortly after, the local tap water hit her digestive system, causing explosive diarrhea before she could make it inside her resort room.
