 6.	Mix the cornstarch with water and stir into the sauce.

 8.	Remove from the heat and cool slightly.

 2. Garlic Chili Oil
 Ingredients (Makes about 2 Cups)
 •	1½ cups (360 ml) neutral oil (canola or vegetable)
 •	½ cup red chili flakes
 •	10 cloves garlic, thinly sliced
 •	2 tbsp sesame seeds
 •	1 tbsp Szechuan peppercorns
 •	2 star anise
 •	1 cinnamon stick
 •	2 bay leaves
 •	1 tsp salt
 •	1 tsp sugar
 Method
 1.	Heat the oil in a saucepan to 170°C (340°F).
 2.	Add the garlic and cook until lightly golden, then remove.
 3.	Remove the oil from the heat and cool for 2–3 minutes.
 4.	Place the chili flakes, sesame seeds, salt, and sugar in a heatproof bowl.
 5.	Slowly pour the hot oil over the chili mixture while stirring.
 6.	Add the fried garlic back to the oil.
 7.	Allow the mixture to cool completely.
 8.	Transfer to a sterilized glass jar.
 9.	Use on noodles, dumplings, rice, soups, pizza, or grilled meats.
 Tips
 •	Avoid overheating the oil to prevent burning the chilies.

 •	½ cup (120 g) gochujang (Korean chili paste)
 •	¼ cup (60 ml) soy sauce
 •	2 tbsp rice vinegar
 •	2 tbsp honey
 •	1 tbsp sesame oil
 •	3 cloves garlic, minced
 •	1 tbsp fresh ginger, grated
 •	1 tbsp brown sugar
 •	1 tsp sesame seeds
 •	2 tbsp water (if needed to thin)
 Method
 1.	Add the gochujang, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and brown sugar to a bowl.
 2.	Whisk until smooth.
 3.	Add water if a thinner consistency is desired.
 4.	Stir in the sesame seeds.
 5.	Taste and adjust the sweetness or spice level.
 6.	Refrigerate for 20–30 minutes to allow the flavors to blend.
