Feta Nut Roast When I was a kid my Mum used to make this incredible nut roast. Honestly, I loved it so much I even had it for my Christmas dinner one year instead of turkey. This is really similar to my Mum's one, but with the lovely addition of creamy, salty crumbled feta.  It's one of those recipes that's almost as lovely to make as it is to eat. And if you've got any leftovers, they're brilliant hot or cold for lunch the next day Have it with roasties and veg and a good glug of gravy - perfect if you fancy something a little bit different for your Sunday dinner  I have written up the recipe for this below and I would love to know if you're going to give it a try, A x Feeds 4 Oil for frying 1 onion finely chopped 150g fresh breadcrumbs 2 x 200g feta cheese finely crumbled 150g chopped mixed nuts (unsalted) 50ml single cream 3 x beaten eggs 1 tbsp dried mixed herbs Salt and ground black pepper Heat a drizzle of oil in a non-stick pan. Add the onion and fry on a medium heat for 5 minutes or until soft. Heat the oven to 200C fan In a large mixing bowl add the breadcrumbs, crumbled feta, chopped nuts, single cream, beaten eggs, mixed herbs and fried onion. Season with salt and pepper. Use a wooden spoon to work the ingredients together until they're combined and the breadcrumbs have been absorbed into the mixture. Line a baking dish approximately cm wide. Tip the mixture in and press it down firmly with a spoon, especially around the edges. Bake in the oven for 30 minutes. Remove from the oven halfway through baking and brush the top with olive oil to give it a lovely golden crust. Leave to cool and firm up for 3-4 minutes before lifting it out of the dish and cutting it into wedges
