Lower heat, let sit 45 min stirring occasionally until caramelized (this is the part where you stir and question your choices). 3. Add balsamic, reduce until syrupy. Set aside to cool. 4. Toss sliced sweet potatoes in oil + spices. Bake at 425°F for 20 min until soft. Cool. 5. Layer 3/4 of jam on crust, fan sweet potatoes on top, add remaining jam, then cheese. 6. Egg wash the edges (1 egg + cream), fold crust over, egg wash the outside too. 7. Bake at 375°F for 45 min, rotating pan at the 20 min mark. 8. Top with chives.
